Cracker Cookies
Saltine crackers (1 package)
1 cup butter
1 cup brown sugar
12 oz. chocolate chips
1 cup nuts of choice (optional)
Preheat the oven to 375 degrees.
Line a cookie sheet with parchment paper. Place one layer of saltine crackers on top of paper.
In a pan, combine 1 cup butter (not margarine) and 1 cup brown sugar. Boil them for 3 minutes while stirring constantly. Pour this over the crackers and smooth with the back of a spoon. Then place the cookie sheet in the oven and cook for 5 minutes.
Take out of the oven and evenly spread 12 oz. of chocolate chips over the warm caramelized crackers. Spread chocolate with the back of a spoon.
Add 1 cup of finely chopped nuts on top.
Cool completely.
Cut and serve.
